In Enterprise XI 3.1 SP5, when exporting a web intelligence document with a line chart containing a z axis with multiple values the report will export, but the charts will not show up. If you remove one of the z axis dimensions the chart will export to excel. The chart always exports to pdf, no matter if there are multiple z axis dimensions or not.
