Is the "Sort by" default option on the Career Portals customizable?

Go to a career site (internal or external) and click the "Search" button.

The "Sort by" default option is customizable and can be changed from the back-end of the system. Please either ask your Partner consultant or raise an case with the SAP Product Support and request changing the default "Sort by" option in Provisioning > "Internal and External Applicant Search Settings".
