We would like to have report on when admins last checked user's profile.

We don't have a out-of-box report which can provide the details of when an admin last accessed  an user account.

However you can create custom report for this requirement using Plateau report designer tool and check the table PH_STUDENT with reference to the column STUD_ID,LST_UPD_USR & LST_UPD_TSTMP, where LST_UPD_USR is the admin ID.
