Text in fields gets truncated unexpectedly, in case of long values.

In People Profile, when the first word of a text field is more than 20 characters long, the rest of the values break unexpectedly, in the middle of the sentence.

This is expected system behavior.

In case of long texts, the break is based on the first word. If it's more than 20 characters long, the rest of the values will break unexpectedly. This was created in consideration that no words would be beyond 20 characters long. To avoid such issues, make sure the first word is 20 characters or less.
