The respective Sales Data ( Sales Unit and Sales Office ) of the Employee is not filled automatically in the New Sales Quote they create.
The same applies to other sales documents, such as Leads, Opportunities, etc.

Reproducing the Issue
Prerequisite : You have selected the scoping question for combined Sales Area determination in the Business Configuration work center :
"Do you want to enable users to default and specify, per sales quote, a predetermined combination of sales org., distribution channel and division?"
Go to the Sales workcenter.
Go to the Sales Quotes view.
Results : In the Quick Create window, the Sales Office is not maintained as per the Sales data of the Employee who creates the Sales Quote.
The reason you are not able to see the Sales Office is because the Org Unit of your user while creating the Quote is not marked as Sales Office in the Organizational Management work center.
Go to the Organizational Management workcenter.
Go to the Org structure view.
Open ABC (ABC represent the Org Unit of the logged Employee is charge of the Sales Quote creation).
- Click Edit.
in the header, tick the box Sales Office.
