When trying to approve the new hire workflow, the error below occurs:
"The following fields TIMEZONE are mandatory in the Data Model. Please ask your system administrator to update the Data Model."
"Image/data in this KBA is from SAP internal systems, sample data, or demo systems. Any resemblance to real data is purely coincidental."

Reproducing the Issue
1. Go to the workflow approval request.
2. Approve the new hire workflow.
Timezone is marked as required in the SDM:
From the SDM, change the statement to: required="false" to get rid of the error.
This can also be changed via Manage Business Configuration:
> Navigate to Employee Profile section > Standard > timeZonePrevious > Change Mandatory=No > Save
