Is it possible to apply analysis options (e.g. Age, Gender, Job Family) to a Waterfall Chart?

No, it is not possible.  The chart can use time dimensions and structural dimensions, but the chart type was deliberately designed without considering analysis options.

Employees are much more likely to change categories in an analysis option than in a structural dimension, and if the chart were to filter on an AO employees might frequently appear and disappear (depending on which was used).  This would be counter to the mathematical purpose of a waterfall chart, namely to calculate a residual after all movements have taken place.
