You want to use the OData service "cpquote" to pass territory value in integration with CPQ scenario. But the service "cpquote" contains only SalesTerritoryID. The metadata does not contain SalesTerritoryName.
Your requirement is to add the field SalesTerritoryName to OData "cpquote" service.

Cause
The OData service "cpquote" is defined for a quick query of quote data which is mandatory for the standard CPQ integration scenario. This service is not intended to query additional data which is optional for the scenario, or can be queried locally or from other connected systems.
Resolution
If you need to query additional fields, address this requirement using the Customer Influence site for SAP Hybris Cloud for Customer, or talk directly to your responsible SAP Contact.
