The Offer Approval template's standalone fields, but need to use other custom fields in the offer approval template. How can we achieve that?

Since there is a limit of how many standalone fields can be used in the offer approval template, another way to use other fields would be by adding fields from the job requisition or the job application templates. Once these fields from the job application or job requisition templates are configured in the template, they will pull the data from these sources. If you want to allow the recruiting users to edit these fields, as explained in the KBA 2411448 - Permission to Edit Offer Approval fields - Recruiting Management, they need to be made reportable.
