This document will explain on how the interview assessment will happen when multiple interview statuses are configured in the instance.

When the Interview is done for the candidate, it will show on the Interview Central for Assessment/Rating for the interview that has been made.
For example, the 2nd interview will not overwrite the 1st interview in the Interview Central. It will create a new entry showing the second interview date once it is done and ready for assessment. However, this will not happen if the interviewer is the same person for 1st and 2nd interview of the candidate. S/he will only see one record of the Interview from Interview Central.
Rule is that the Assessment of the interview is for One Candidate in One Requisition in One Interview for an Interviewer. If the 2nd interview is with the other interviewer, it should create a new entry, and not to overwrite the 1st interview details in Interview Central.
