 Is the expiration date that is set on an approval workflow tied to a specific revision of the model?  So if I create another revision of the model, that expiration date is removed?

No, just creating a new revision won't remove the expiration trigger. However, having a new approval running or a newer approved revision renders the expiration trigger for the old revision obsolete and just ignores it / removes it.
