Would it be possible to create additional custom attribute fields (e.g Process owner email address & Process owner position) at a diagram level & then select those entries in our custom modeling convention check?

yes, that would be possible. You can create a new custom attribute (see manual) and select it in the custom modelling convention as a new mandatory field. You can also decide how critical should it be in the modelling convention.
