You notice that, as time passes and a manually created task becomes overdue, system does not create a escalation for it and there is no way to manually trigger a escalation either.

Manually created tasks are adhoc tasks that are completely predefined and lack the necessary backend definitions to produce a escalation.
The only actions which can be performed with manually created tasks are Change Priority, Complete, Forward, Add Attachments etc.
This is the standard system behavior.
