Is it possible to add more values to standard field Source in Job Application template, since it is an enum type field?

This is not possible, since Source field is a standard field and its values are hardcoded. This field captures the information in the moment a job application is created, informing from how the application got created in the system.

If you add enumeration values to the field directly in the code or using Manage Templates tool, the enumeration values added will not show. Only the default values will be displayed, as below:

If you want to have other source values displayed, to be filled in job application by recruiters or even candidates, a possible option is create a custom picklist field instead.
