An assignee can remove a story filter that has been specified by defining a context on a calendar task.

This is by design.

This is how those story filters work.

They are meant to be a helper for the assignees to focus on the relevant data but they don't replace data access restrictions.

If you need to limit the data an assignee can see you should consider using other functionalities like the Data Access Control.
