Since 2H 2022 release it is possible to schedule interviews that cross midnight in the Interview Organizer's time zone.

Recruiters can now schedule interviews that cross midnight in their own time zone. This allows them to schedule a time that is good for the time zone of the interview participants.

With this enhancement, we've removed the restriction on scheduling interviews beyond midnight. This enhancement is from Customer Community Idea 262727.
