Symptom
When creating a follow up Activity from an Opportunity (such as an e-mail), the Opportunity's attachments are being automatically added to the Activity

Resolution
The standard system will only copy the same attachment types. If you create special attachment types only visible for the Opportunity, then these attachments should not be copied to the activity. Please check fine-tuning activity: "Customer-defined document types for attachments".
