There is no configuration option for assigning a different settlement profile to production order types or process order types.

SAP S/4HANA Cloud 

The change of settlement profile is not supported by standard so far.
It is also not planned in the future because Event-Based Production Cost Posting (scope item 3F0) is introduced to enable real-time insights and enriched information for manufacturing orders in Production Accounting.  It’s offered as a replacement for the traditional solution Period-End Closing - Plant (scope item BEI), which is going to be deprecate in a future release.
