It is not possible to set a future date on Offboarding task Announce termination to coworkers.

If tomorrow is termination day it is only possible to set a future date "today".

System behavior.

This is expected behavior.

You cannot select a custom date beyond termination date because the candidate profile will be inactive in Employee Central side. 

So if termination day is tomorrow, the task need to have on custom range today's day.
