It's not possible to edit delivery text after posting goods issue.
Environment
SAP S/4HANA Cloud Public Edition
Cause
It's standard behavior that the text in the delivery is not editable after PGI.
Resolution
To edit such fields, reverse goods issue, perform the modifications and then post goods issue again.
