Need to hide certain Email Type/ Phone type / Marital Status During Onboarding New Hire Data Review or Personal Data collection

It is impossible.

Email Type, Phone type, Marital Status is controlled by picklist: ecEmailType, ecPhoneType, ecMaritalStatus.

Fields which are of data type picklist or Generic object, can only be controlled on a field level, and not via the values inside the fields.

The only thing that you can do to restrict users saving data with picklist values of this type, is via raise message rules.
