Symptom
After creating a custom field for the relevant business scenario and enabling it to the relevant apps, it cannot be added to the service confirmation screen as the Adapt UI option is not available through the menu.
The same custom field could be added to service order screen, via the same path, were Adapt UI was available:

Resolution
The Adapt UI functionality can be enabled via the gear button in the top-right corner of the service confirmation
Note: in display or change mode, the button is located in the same place.
