Is there a way to modify the font and its size of the Language dropdown and the Sign-In buttons of the career site?

It is possible when using a Custom Header.

This is done by accessing Career Site Builder, in the Header Component by following below steps:

1. Go to Manage Career Site Builder
2. Go to Appearance > Styles
3. Under Headers, expand the locale to be modified
4. Open the brand to be modified
5. Click on Desktop Layout or Mobile Layout
6. Click on the Sign-In & Language component
7. Click on the text icon right next to the item to be modified:
   
   
   
8. Then, the font and size of the text can be modified:
